Making this Monday a little brighter by enjoying these cashew “cookie dough” bites this morning! All the fun of cookie dough, no risk of salmonella. Win win. They are SO easy to make: . . -1 cup raw cashews -3 tablespoons agave -2 teaspoons vanilla -As many mini chocolate chips as you want! (I used ~1/4 cup) . . -Blend cashews together in a food processor or high powered blender -Add agave and vanilla, blend until smooth -Add a little water if the “dough” starts to stick -Mix chocolate chips in by hand -Roll into small balls and enjoy! (Makes a small batch, feel free to double or triple if you want! They keep best in the refrigerator or freezer) . . How are you making your Monday a little brighter??
